This week I have fallen in LOVE with Sweetopolita. I couldn't go to sleep at night without dreaming of her deliciously beautiful creations. All was not right in the world until we made these Campfire Delight Cupcakes.
It was a little time consuming, but maybe that's because all 5 kids were helping me. It's a rich chocolate cake, with toasted marshmallow filling, and a chocolate frosting to die for. The only variation I made was substituting the coffee for water and cocoa powder for the malt. Other than that I tried to stay true to the recipe......and these cupcakes didn't disappoint.
